Simple Slow Cooker Roast Chicken
YIELD: 4 to 6 servings
Ingredients:
1 whole chicken (about 5 pounds)
2 cups of chopped carrots or 1 bag (1 lb) of baby carrots
Celery (about 4 oz), chopped (including the leafy greens)
Lemon juice (optional)
1 TBSP of chicken bouillon
1 TBSP of Italian seasoning + s
alt & pepper to taste

Instructions:
Place chicken in slow cooker early in the morning
Rub with bouillon, cover & let cook on high for three hours
Add chopped carrots & lettuce
Season w/ Italian seasoning, salt, & pepper.
Once chicken is completely cooked (at least 4 hours but use a meat thermometer to be safe) set your oven to broil.
Line the roasting pan with aluminum foil and transfer the chicken and vegetable to the roasting pan.
Leave in the oven to broil for 10 minutes
Remove , squeeze lemon juice over chicken, let cool & enjoy!
