Simple Slow Cooker Roast Chicken

YIELD: 4 to 6 servings

Ingredients:

  • 1 whole chicken (about 5 pounds)

  • 2 cups of chopped carrots or 1 bag (1 lb) of baby carrots

  • Celery (about 4 oz), chopped (including the leafy greens)

  • Lemon juice (optional)

  • 1 TBSP of chicken bouillon

  • 1 TBSP of Italian seasoning + s

    alt & pepper to taste

Instructions:

  • Place chicken in slow cooker early in the morning

  • Rub with bouillon, cover & let cook on high for three hours

  • Add chopped carrots & lettuce

  • Season w/ Italian seasoning, salt, & pepper.

  • Once chicken is completely cooked (at least 4 hours but use a meat thermometer to be safe) set your oven to broil.

  • Line the roasting pan with aluminum foil and transfer the chicken and vegetable to the roasting pan.

  • Leave in the oven to broil for 10 minutes

  • Remove , squeeze lemon juice over chicken, let cool & enjoy!
